Top 5 BREADLESS Sandwiches

While here at Phen.com we are supporters of eating a balanced diet, including healthy carbohydrates like fruit, vegetables, and whole wheat bread and pasta, sometimes it’s nice to take a break from your usual midday sandwich and opt for something a little lighter, especially if you’re sticking to a calorie limit. Here we present the top five breadless sandwiches, which all look so good that bread might start to get jealous!

1. Guacamole & Bacon Portobello Mushroom Stack

First up we have the mighty Portobello mushroom stack filled with bacon and guacamole. To make two of these, you will need:

  • 4 Portobello mushroom caps
  • Oil for cooking
  • 2 slices of tomato
  • ½ cup spinach leaves
  • 2 slices of cooked bacon
  • 3 tablespoons of guacamole

Start by scooping out the gills and stem of the mushrooms, then cook the mushrooms on a skillet with a little oil until they become golden brown on the top and more tender. Remove the mushrooms from the pan and pile the chicken, bacon, spinach and half of the guacamole on one mushroom cap then top with the other mushroom, then repeat for the other set of mushrooms.

2. Tuna & Pesto Lettuce Wraps

The giant leaves of butter lettuce make great wraps if you’re avoiding bread this lunchtime. You can fill your wrap with almost anything, but for a tasty treat, try this recipe made with tuna and pesto, which requires:

  • 2 butter lettuce leaves
  • 3oz of tuna in water (drained and flaked)
  • 1 tbsp of basil pesto sauce
  • 1 tsp of lemon juice
  • 1 slice of provolone cheese

Lightly stir the tuna, pesto and lemon juice in a bowl until well combined. Spread half the tuna mix on each leaf, then top each with half of the provolone cheese. Fold the bottom of the leaf up to contain the filling, then roll long-ways, and enjoy!

3. Cheese & Ham Salad Skewers

Swap your bread for skewers and enjoy your typical sandwich fillings in a new way. To make this recipe you will need:

  • 4 wooden skewers
  • Provolone cheese
  • Deli ham
  • Black olives
  • Cherry tomatoes
  • Sliced cucumber
  • Yellow pepper

Spear the ingredients and anything else you fancy with the skewer, aiming to make a colorful display that will outrival any boring old bread sandwich.

4. Ham & Cucumber on Pan-fried Tofu

When lightly fried, Koya tofu turns crispy and crunchy and packs even more protein into your lunch. To make one of these ‘sandwiches’ with ham and cucumber, you will need:

  • Freeze dried tofu squares (about 3 inch size)
  • Vegetable stock
  • Oil for cooking
  • Sliced deli ham
  • Sliced cucumber

Soak the dried tofu in cold water until they no longer feel hard, which should take about 5-10 minutes. Bring a pot of vegetable stock water to the boil. Drop the tofu in and leave for a few minutes – this step adds more flavor to the tofu. Drain the tofu squares well to get rid of moisture then shallow fry them in oil until they are golden brown and crispy. Pat the tofu with kitchen paper towels to drain the moisture, then cut the tofu in half to end up with two thinner slices. Then add the ham and sliced cucumber, with a little mayo if you want, and tuck in!

5. Red Pepper Slices

Slicing your red pepper long ways creates a handy holder for any filling of your choice. To make your own red pepper sandwich with turkey and avocado, you will need:

  • 1 red pepper
  • Sliced turkey
  • Half an avocado, sliced

First cut the ‘cap’ and stalk from your pepper, then cut the pepper in half long-ways, and scoop the center and seeds. Wash and dry the pepper, and line your ‘sandwich’ base with slices of turkey and avocado, before topping with the other half of the pepper.

What’s great about all of these breadless sandwich ideas is that they pack in extra veggies in place of bread, or a hefty quantity of protein in the case of the tofu.
